Cantonese Black Sesame Soup

Although black sesame soup is so elegant, it is surprisingly easy to make, taking only 3 ingredients. It is a sweet, smooth, and lushcious soup with a rich sesame taste. Serve as a dessert for an interesting change up to your regular dessert routine.

Equipment

  • Blender
  • Medium bowl
  • large saucepan
  • Frying pan

Ingredients

  • 1 cup Long grain rice
  • 1 cup Black sesame seeds
  • 8 cups Water
  • 1 cup Sugar

Instructions

  • Prep - Soak rice with water for between 1 to 4 hours. Toast sesame seeds for 2 minutes in a frying pan or wok set over low heat. Watch carefully so they don't burn and become bitter.
  • Make Rice and Sesame Mixture - Drain the rice and combine with 3 cups water. Blend on high until completely smooth. Pour into a bowl and rinse out the blender.
    Ground the black sesame seeds in the blender until smooth. Add ½ cup water and blend briefly to get a smooth paste.
    Add blended rice to the sesame seeds in the blender. Blend until well combined.
  • Make Soup - Pour rice/sesame mixture into a large saucepan or pot. Add remaining water and sugar and bring to a boil. Once soup boils, reduce heat to low and simmer for 10 minutes to thicken. Stir frequently.
    Pour into small bowls and serve warm.
