British Strawberry Jelly

Equipment

  • small saucepan
  • Food Processor or blender
  • Large bowl
  • Sieve or wire mesh strainer
  • Gelatin mold or bundt pan

Ingredients

  • 1 cup Superfine sugar
  • cup Water, divided
  • ¼ oz Plain gelatin powder
  • 1 lb Fresh strawberries

Instructions

  • Make Syrup - Boil sugar and water in a small saucepan for 5 minutes. Remove the saucepan from heat and allow the mixture to cool down.
  • Prepare Strawberry Mixture - Set 4-5 strawberries aside. Trim the stems from the rest of the strawberries and puree until smooth. Transfer the puree to a large bowl and mix in the sugar-water mixture. Cover the bowl with a clean kitchen towel and allow the mixtures' flavors to infuse for at least 30 minutes and up to 2 hours. Strain the mixture through a wire mesh strainer to remove any pulp or seeds.
  • Finish Jelly - Pour cold water into a dish. Sprinkle gelatin powder onto the water and let everything sit for 5 minutes. Heat 1 cup of the strawberry-sugar mixture in a small saucepan. Add the gelatin and gently simmer until the gelatin has completely dissolved. Stir this back into the strawberry-sugar syrup. Pour everything into a jell-o mold or individual ramekins. Refrigerate for a few hours or overnight to set.
  • Serve - Unmold the jelly by dipping the mold in hot water for 30 seconds. With wet fingers, gently separate the jelly from the mold. Release the jelly on a platter and decorate it with reserved strawberries and whipped cream, if desired.

Notes

  • Commercial Jell-O mix can be used except the flavors won't be as deep.
