Equipment

  • Glass serving bowl
  • Small bowl

Ingredients

  • 2 medium Cucumbers, scored with fork and sliced thin
  • 2 medium Zucchinis (courgettes), scored with fork and sliced thin
  • 1 medium Red bell pepper, cored and sliced thin
  • 1 medium Red onion, sliced thin
  • ½ cup White wine vinegar
  • 4 tbsp Sugar
  • 1 cup Hot water
  • 1 tbsp Salt
  • 1 tsp Coarse black pepper
  • 1 tsp Crushed red pepper flakes

Instructions

  • In a glass bowl, alternate layers of onion, bell pepper, cucumber, and zucchini.
  • In a small bowl, whisk the vinegar, hot water, sugar, salt, pepper, and chili flakes together. Pour over the vegetables in the glass bowl.
  • Allow to marinate in the refrigerator. Serve chilled.
