Lohikeitto- Finnish Salmon Soup

It will become obvious after just one spoonful of this comforting soup why it's so popular in Finland. This flavorful soup uses cream as its base and although the addition of chunks of salmon, potatoes, leeks, and plenty of dill doesn't sound too fancy, it is surprisingly elegant and has everything to keep a person warm during the cold winter months.

Ingredients

  • ¼ cup Unsalted butter
  • 1 medium Leek, white and light green parts only
  • 5 cup Fish stock, purchased
  • 1 lb Potatoes
  • 1 medium Carrot
  • 1 lb Salmon fillet, without skin and bones
  • 1 cup Heavy cream
  • 1 cup Fresh dill
  • Salt and pepper to taste

Instructions

  • Prep - Wash leek thoroughly to remove any grit. Slice leek and peeled carrot into ¼-inch thick pieces. Cut salmon fillet and potato into small chunks. Roughly chop dill for garnish.
  • Make Soup - Melt butter in pot over medium heat. Add sliced leek and sauté until soft, about 7 minutes. Add fish stock, carrot, and potatoes. Bring to a boil and cook for another 10 minutes. Add salon chunks and cream. Cook about 7 minutes more.
  • Serve Lohikeitto - Turn off heat and season with salt, pepper. Close lid and wait for 10 minutes. Serve with bread or crackers and enjoy!
