Ingredients

  • 3 tbsp Water
  • 2 tbsp Fresh lime juice
  • 2 tbsp Extra-virgin olive oil
  • ¼ tsp Salt
  • ¼ tsp Black pepper
  • 1 stalk Scallion, ¼-inch slices
  • 2 tbsp Cilantro, chopped
  • 14 oz Can hearts of palm, sliced ½-inch pieces
  • 2 medium Tomatoes, roughly chopped
  • 1 medium Avocado, sliced

Instructions

  • Combine water, lime juice, oil, salt, and pepper in a serving bowl. Mix in scallion and cilantro. Toss the hearts of palm, tomato, and avocado into the bowl and gently toss to coat.
