When you think of barbecue sauce, this isn’t it. In northern Alabama, pitmen have using this tangy and creamy white barbecue sauce on chicken since the sauce was created in the 1920s by legendary barbecue man Big Bob Gibson. While a departure from the traditional, it’s a delicious accompaniment for smoked chicken dishes. It takes all of five minutes to make and will last, covered, in the refrigerator for weeks.
Alabama White BBQ Sauce
This interesting mayonnaise-based BBQ sauce mates especially well with grilled or smoked chicken. Baste it on in the final minutes of cooking and serve extra in a bowl at the table.

Ingredients
- 1 cup Mayonnaise
- ⅓ cup Cider vinegar
- ¼ cup Lemon juice
- ¼ cup Apple juice
- 1 tbsp Garlic powder
- 1 tbsp Dijon mustard (or prepared horseradish)
- 1 tbsp Coarsely ground pepper
- ½ tsp Salt
- ½ tsp Cayenne pepper
Instructions
- Put all the ingredients in a large bowl and whisk to thoroughly combine. Transfer to a jar with a screw-on lid and refrigerate a few hours for the flavors to meld. Will keep in the fridge for several weeks.
