Danish Birthday Cake Tradition (Kagemand)

Kagemand loosely translates to “cake man”. The cake is a kids birthday party tradition in Denmark that adults love as well. The cake is in the shape of a boy (Kagemand) or a girl (Kagekone) and then decorated by mother and child to look like a person with candy, frosting, and sprinkles. A birthday party in Denmark is kicked off by the cake man or woman being decapitated by the birthday boy or girl. Morbid, yet a good time!

Kagemand or Kagekone (cake man or cake woman) is a simple cake in the shape of a boy or a girl that is traditionally eaten at birthdays in Denmark. The fun part is decorating the cake in whatever design and candies that you like. In Denmark, a birthday party starts with the cake figure being decapitated while all the children scream. Good times!

Equipment

  • Medium saucepan
  • Large bowl
  • Stand or hand mixer.
  • Baking pan lined with parchment paper

Ingredients

  • oz Butter
  • 7 oz All-purpose flour
  • 1⅔ cup Water
  • 6 large Eggs
  • 2 tsp Sugar
  • Frosting and candy for decorating

Instructions

  • Batter – Warm butter and water in a saucepan over medium heat. When butter is melted, Add flour and sugar to the saucepan. Mix everything together to get a sticky batter.
  • Cake Dough – Transfer the batter to a large bowl and let cool a bit. Using a hand mixer, incorporate eggs one at a time.
  • Bake – Preheat oven to 400℉ (200℃). On the backside of a sheet of semi-transparent parchment paper, draw the outline of your cake man or woman. Flip the parchment over and place on a baking sheet. Fill in the lines with the cake dough. The dough will expand over the drawn edges. If the dough expands too much, you can trim the cake with a knife after it bakes.
  • Bake – Bake cake for 30 minutes without opening the oven. Remove cake from oven and allow it to cool.
  • Decorate – Decorate cake with frosting, sprinkles, and candy.
